Für die Schokolade selbst gelten feste Untergrenzen, welche das Gesetz nach Sorten staffelt. Marzipan wiederum ist Mandel und Zucker, zu einer feuchten, nachgiebigen Masse gerieben, und als Edelmarzipan die feinere Stufe davon. Zum Fest wird es zu Kartoffeln gerollt, in Kakao gewendet oder in dunkle Schokolade gehüllt. Dazu kommt ein Brauch, welcher Schokolade zum Baumschmuck macht, an Kordeln aufgehängt und erst nach und nach vom Zweig genascht.\u003c\/p\u003e\n\u003cp\u003eDie Aromen dieser Jahreszeit kommen vom Weihnachtsmarkt, aus der Backstube und aus dem Obstkeller: gebrannte Mandel und Krokant, Bratapfel und kandierte Orange, Nougat, Marzipan, Eierlikör. Jede Manufaktur übersetzt sie anders in Schokolade – die eine macht daraus eine Kugel, die andere eine Schachtel voller kleiner Formen, die dritte eine Tafel nach einem Gebäck aus ihrer Stadt.\u003c\/p\u003e\n\n\u003ch3\u003eSchokokugeln aus Berlin, jede Sorte in ihrem eigenen Papier\u003c\/h3\u003e\n\u003cp\u003eLeise knistert das Papier, wenn man die Kugel mit gebrannter Mandel aufdreht, und schon steigt der Duft vom Weihnachtsmarktstand auf, Zucker, Röstung, warme Mandel. Bei Sawade in Berlin werden die Hohlkugeln im eigenen Haus geschleudert und erst nach dem Erkalten gefüllt. Jede wird einzeln in Papier gedreht, und an seiner Farbe erkennt man die Sorte. Rot hüllt die \u003ca href=\"\/en\/products\/sawade-schokokugeln-edelmarzipan-5-st\"\u003eSchokokugeln mit Edelmarzipan\u003c\/a\u003e, Orange den Bratapfel, Gold die Vanille mit Karamell, Türkis den Nougat Crisp und Hellgrün den Blätterkrokant.\u003c\/p\u003e\n\u003cp\u003eIm Blätterkrokant zerfällt der Kern in feine Lagen, erst splittert es, dann schmilzt es. Die Kirsche unterbricht das süße Nougat genau dort, wo man sich nach etwas Frucht sehnt. Für die Kugel mit gebrannter Mandel schmilzt der Zucker zweimal im Kessel, und während die Trüffelfüllung zergeht, knirscht der Krokant noch nach.\u003c\/p\u003e\n\u003cp\u003eAus Frankreich kommen die Schachteln von Michel Cluizel, gemischt aus heller und dunkler Schokolade. Darin liegen Pralinen mit Ganache, der Creme aus Schokolade und Sahne, mit Praliné aus gerösteten Nüssen und karamellisiertem Zucker und mit Nougatine auf einem Waffelblatt. Die \u003ca href=\"\/en\/products\/cluizel-weihnachtspralinen-335-g\"\u003egroße Pralinenschachtel mit Mendiants\u003c\/a\u003e hat ein eigenes Fach für die Mendiants, kleine Stücke Schokolade, belegt mit Pistazie, Mandel und kandierter Frucht. Daneben stehen die Weihnachtstrüffel des Hauses, fünfzehn Stück in einer Schachtel.\u003c\/p\u003e\n\u003cp\u003eItalien schickt Gianduia, die weiche Masse aus Schokolade und gerösteten Nüssen. Majanis \u003ca href=\"\/en\/products\/majani-fiat-cremino-classico-weihnachtsschachtel\"\u003eSchichtkonfekt aus Haselnuss und Mandel\u003c\/a\u003e liegt als Würfel aus vier Lagen in der Weihnachtsschachtel, massiv bis in die Mitte. Die Milchschokoladentafel Certosino trägt den Namen eines Bologneser Weihnachtsgebäcks, mit kandierter Orangenschale, Mandeln, Haselnüssen und kandierter Kirsche. Aus dem Trentino kommen dazu Vollmilchkugeln mit Pistazienlikör. Und wer Lakritz liebt, findet aus Dänemark eine Winterauswahl Schokoladenlakritz in acht Sorten.\u003c\/p\u003e\n\n\u003ch3\u003eKugel, Trüffel oder Schachtel – der Anlass wählt die Weihnachtsschokolade\u003c\/h3\u003e\n\u003cp\u003eDie passende Weihnachtsschokolade ergibt sich aus dem Anlass, denn Kugeln und Marzipan gehören auf den bunten Teller, Behang in den Baum und eine Pralinenschachtel auf die Festtafel. Für den Teller zählen Sorten, die einzeln gewickelt sind, weil sich jeder seine eigene nimmt. Für die Runde nach dem Festessen zählt die Abwechslung einer gemischten Schachtel, für den Espresso danach ein Trüffel oder ein Würfel Gianduia.\u003c\/p\u003e\n\u003cp\u003eOb Alkohol in der Füllung steckt, zählt, sobald Kinder mitnaschen. Auch Marzipan bekommt mitunter etwas geschmacksneutralen Alkohol, der es haltbar hält, etwa in Sawades Marzipankartoffeln, deshalb lohnt bei jeder Sorte der Blick in die Zutaten. Vegan ist bei Sawade die Schokokugel mit Edelmarzipan.\u003c\/p\u003e\n\u003cp\u003eAuch die Größe der Runde wählt mit, und für den kleinen Kreis gibt es Cluizels Schachtel mit zwanzig Weihnachtspralinen. Für die Familie, zu der am zweiten Feiertag noch Cousinen und Nachbarn stoßen, die große mit dreiunddreißig Pralinen. Einzeln gewickelte Kugeln und Behang verteilen sich dagegen über Tage, auf Schreibtische, in Brotdosen und an den Baum.\u003c\/p\u003e\n\u003cp\u003eBeim Marzipan entscheidet die Hülle, und klassisch werden Marzipankartoffeln in Kakaopulver gewälzt. Sawade dagegen dragiert seine handgerollten \u003ca href=\"\/en\/products\/sawade-edelmarzipan-kartoffeln-102g\"\u003eMarzipankartoffeln\u003c\/a\u003e im Kupferkessel mit einer dünnen Haut aus Edelbitterschokolade, bis sie matt und erdfarben aussehen wie frisch geerntete Frühkartoffeln. Von Hand gerollt sind auch die Kartoffeln der Confiserie Imping. Wer lieber bricht als wickelt, landet bei der Tafel, und die Certosino aus Bologna bringt das Weihnachtsgebäck gleich mit hinein.\u003c\/p\u003e\n\n\u003ch3\u003eWeihnachtspralinen aus Häusern mit eigener Handschrift\u003c\/h3\u003e\n\u003cp\u003eWer eine Schachtel Weihnachtspralinen öffnet, schmeckt darin auch die Werkstatt, aus der sie kommt, und deshalb haben wir für diese Seite Häuser gesucht, die etwas Eigenes können. Sawade nennt sich die älteste Pralinenmanufaktur Berlins, und dort sind es Confiseure, Süßwarenmeister und Konditoren, welche die Kugeln füllen und für den Baum die Goldnüsse, Glocken und Tannenzapfen formen.\u003c\/p\u003e\n\u003cp\u003eMichel Cluizel, ein Haus aus Damville in der Normandie, arbeitet direkt mit Kakaobauern auf drei Kontinenten zusammen, und so beginnt eine Praline dort schon bei der Bohne. In Bologna entstand bei Majani 1911 der Cremino Fiat, jener Würfel aus geschichtetem Gianduia, welcher heute in der Weihnachtsschachtel liegt.\u003c\/p\u003e\n\u003cp\u003eEigen sind auch die übrigen Häuser, welche wir für die Weihnachtszeit ausgesucht haben. Die Confiserie Imping in Vreden, im westlichen Münsterland, ist ein Familienbetrieb, in dem inzwischen die dritte Generation arbeitet, und von dort kommt neben den Marzipankartoffeln auch das Edel-Marzipanbrot. Ihre Marzipankartoffeln führen wir neben denen von Sawade, weil sich an beiden gut schmecken lässt, wie verschieden zwei Werkstätten dasselbe Stück auslegen.\u003c\/p\u003e\n\u003cp\u003eMarzadro ist eine Brennerei in Nogaredo im Trentino, von der die Kugeln mit Pistazienlikör stammen, und Lakrids by Bülow umhüllt in Dänemark Lakritz mit Schokolade. Von jedem dieser Häuser haben wir ausgesucht, was zu seinem Weihnachten gehört, und genau das macht den Teller bunt.\u003c\/p\u003e\n\n\u003ch3\u003eVom Adventskaffee bis zum Glückspilz an Silvester\u003c\/h3\u003e\n\u003cp\u003eMarzipan zeigt seinen Duft erst bei Zimmertemperatur, deshalb hol die Kugeln mit Edelmarzipan ein paar Minuten vor dem Kaffee aus der kühlen Kammer und lass sie auf dem Teller ankommen. Die Kugel mit Eierlikör steckst du im Ganzen in den Mund, weil ihre Füllung flüssig bleibt und beim Aufbeißen nachläuft. Die Weihnachtspastete schneidest du kalt in schmale Stücke, damit Kirsche, Nougat und Marzipan im selben Bissen landen.\u003c\/p\u003e\n\u003cp\u003eDen Baumbehang hängst du mit dem übrigen Schmuck auf. Wenn am Abend eine Goldnuss vom Zweig verschwindet, raschelt beim Auswickeln das Gold, und unter der herben, dunklen Schokolade wartet geröstetes Haselnussnougat. Den Schoko-Pilz von Sawade hebst du dir für den Jahreswechsel auf, denn er ist als Glückspraline gedacht, ein Glückszeichen wie Kleeblatt und Schornsteinfeger. Er gehört auf den Tisch, wenn um Mitternacht angestoßen wird.\u003c\/p\u003e\n\u003cp\u003eNach dem Festessen, wenn die Teller abgeräumt sind und keiner mehr aufstehen mag, kommt die Schachtel auf den Tisch. Die Winterauswahl von Lakrids by Bülow gehört eher an den Abend, Sorte für Sorte aus ihrem Fach, salzig, süß, sauer.\u003c\/p\u003e\n\u003cp\u003eFür den Adventsbesuch reicht ein Beutel mit fünf Kugeln und Schleife, der in jede Manteltasche passt.
