The Chardonnay grape variety has a great advantage: it is flexible and adaptable, or as it is called in the wine world: it expresses its terroir. It grows in the north as well as in the south, coping with hot summers, although less well than with cool, rainy years. It grows on a wide variety of soils, but it likes limestone, such as that found around Weingut Weedenborn in Monzernheim.

After Sauvignon Blanc, Chardonnay is the number 2 grape variety in Gesine Roll's list of favorite grapes. Cool and well-nourished limestone soils in high altitudes of the Palatinate serve as the basis for the Kaitui Sauvignon Blanc. These grapes have an enormous influence on the exotic fruit expression of the popular Kaitui. The location and perfectly healthy grapes, harvested in various stages of ripeness, are a simple yet effective recipe for success for Markus Schneider. In New Zealand, the overseas home of Sauvignon Blanc, KAITUI is the Maori translation for the word "Schneider" (tailor). While this refers more to the profession than the name, it did not deter Markus Schneider when naming his popular Kaitui. A white wine legend that you absolutely must try.

Sauvignon Blanc from the Palatinate

In the glass, the Kaitui Sauvignon Blanc shines with a soft, pale yellow color with subtle greenish reflections. This led him to the idea of creating such a wine in his home region of the Palatinate, where a climate similar to that on the other side of the globe prevails, following the New Zealand model. Thus, he planted Sauvignon Blanc vines early on in the different soils of the Palatinate and experimented with them. But even though the Schneider Sauvignon of the first vintage already showed the finesse of the later cult wine, it sold hesitantly. A friend living in New Zealand then gave Markus the idea of naming it Kaitui, thereby bridging the gap between the old and new wine worlds. The complexity of the Kaitui is due to the different harvest times of the Sauvignon. The early harvest brings green, grassy notes, the main harvest stands for fruity-juicy notes as well as a fine spice, and the late-harvested, fully ripe grapes contribute expressive exotic fruit notes.

The 2024 vintage was a very differentiated vintage – varying from village to village more than ever before. Some vineyards suffered from torrential rains, others from drought. In Ellerstadt, the Schneider family was blessed with the weather. 2023 brought a spring without frost, a very warm summer with rainfall exactly when it was needed. Added to this was picture-perfect weather during harvest time in September with 298 hours of sunshine, double the long-term average. Around 50 harvest helpers were instrumental from September 4th to October 20th in ensuring one of the highest quality vintages in the estate's history.

All grapes are gently processed in the modern press house, carefully pressed under low pressure after a short maceration period of 4 hours, and then aged temperature-controlled in stainless steel tanks without external intervention.

Kaitui – a wine and its values

Origin Germany

Growing region Palatinate

Grape variety Sauvignon Blanc

Vintage 2024

Screw cap

12.5 % vol. alcohol

4.9 g/l acidity

1.0 g/l residual sugar

//cdn.shopify.com/s/files/1/0905/1124/5646/files/markus-schneider-kaitui-sauvignon-blanc-2024.jpg?v=1751009256
knipser-chardonnay-weissburgunder-2025
Chardonnay Pinot Blanc – 2025

Chardonnay & Weißburgunder – Estate Wine from Weingut Knipser

The Knipser Chardonnay & Weißburgunder 2025 from Weingut Knipser in Laumersheim in the Pfalz is a fine, dry VDP Gutswein (estate wine) and one of Knipser's most popular wines. The selective hand harvesting of the grapes often takes place in several passes. The path to the new winery is not far, where the grapes are gently processed further. The approximately 70-hectare vineyards, facing south/southwest, have a slope of 5-15%. The site owes its name to the many walnut trees that used to stand between the rows of vines. The warmer, frost-proof site is characterized by loamy sandy soils with red sandstone in the subsoil. The Rings brothers attach great importance to healthy soils, as only from them can healthy vines stand and healthy grapes grow. Therefore, they start early with the sowing of buckwheat, clover, and radish, which prevents soil erosion, attracts beneficial insects, and retains moisture in the soil, which is revitalized with the application of horse manure as a natural fertilizer. Canopy management is also important for the quality of the wine: double shoots are removed manually, and depending on the weather conditions, the grapes are defoliated and thinned to aerate them. The grapes are harvested by hand at the optimal time and selected, and pressed as whole clusters. The yield is 4,500 L/Ha. After a short maceration period, natural yeasts are allowed to work and initiate spontaneous fermentation. The aging takes place partly in stainless steel tanks, partly in Halbstück barrels, where it remains on the full lees for 9 months before being bottled without fining, enzymes, or other aids.

Ungsteiner Nussriegel Riesling – a wine and its values

Origin Wine from Germany

Growing region Palatinate

VDP.ERSTE LAGE 1G Ungsteiner Nussriegel

12.0 % vol. The subsequent maturation in 600-liter wooden barrels perfects the characteristic Gunderloch taste: minerally cool, with crystal-clear fruit and vibrant, well-integrated acidity.

Riesling – a wine and its values

12.5% vol. Spontaneously fermented for four weeks on the skins in acacia barrels. The excellent location of the vineyards on a Rheinhessen hilltop, which brought plenty of wind (leading to quicker drying after rain and cooling during heat), was a gift of nature last year. This, combined with a conscientious winemaker like Gesine Roll and a highly motivated team in the vineyards who could react spontaneously to weather changes, shows in the outstanding 2024 vintage: artisanal work is rewarded with high quality.

The grapes from the winery's up to 26 individual parcels were harvested at their individually suitable times and vinified separately. Sauvignon Blanc demands consistent work from the winemaker in the vineyard and cellar, even more so than other grape varieties. After manual harvesting, the grapes were processed with dry ice to protect the must from oxidation. This is important to Gesine Roll from Weingut Weedenborn for Sauvignon Blanc, as the typical Sauvignon Blanc aromas are highly volatile – meaning they quickly dissipate – upon contact with oxygen. The aging took place partly in oak barrels and partly in stainless steel tanks. Only shortly before bottling, the individual batches were skillfully blended to create a wonderfully complex assemblage.

Gesine Roll and her No. 1

Gesine's great love is Sauvignon Blanc. In 2013, Gesine Roll won the Sauvignon Blanc Trophy with her Sauvignon Blanc Terra Rossa. To this day, one is lucky to get hold of a few bottles of Terra Rossa.
