The Arnaud family's home is Fortvielle, one of the most beautiful villages in the heart of Provence. The modern facility is located between Arles and Avignon. Immediately after the harvest between September and January, olives, such as the green Picholine olives from the Vallée des Baux, are processed into jarred olives. First, the olives are pitted; the green ones are pickled with vinegar, herbs from Provence, and oil, while the black ones are first dried and then filled into jars and also pickled with herbs from Provence.
