Brut is vinified using the traditional method in the Penedès wine region of Catalonia. The grapes come from our own vineyards and those of friendly winemakers, all of whom are organically certified. The vineyards are cultivated close to nature without the use of chemicals. Harvesting takes place in the cool morning hours to prevent the grapes from oxidizing. During the harvest, most of our grapes are hand-picked and selected to ensure their optimal quality before pressing. Hola Cava is a D.O. Cava in terms of quality, typically made from the Parellada, Macabeo, and Xarel-lo grape varieties. The Parellada grapes are grown in the mountains at an altitude of 500 meters. Macabeo grows in lower areas and brings roundness to Hola Cava. Xarel-lo has a strong personality with intense aromas and gives the Cava structure.
