This refers to the dark color of the berries and the grape variety's unique tannin structure. The Negroamaro for the Canonico grows on trellises and was harvested in the second half of September, then macerated in special stainless steel tanks, specifically horizontal rotating tanks, where they optimally impart color and aromatic substances to the must.
