The double caraway is produced by maceration, where the botanicals release their aroma into the neutral alcohol, and then it is distilled in a copper still. For caraway spirits like aquavit or kümmel, a minimum alcohol content of 30% Vol. is required, while a double caraway must have an alcohol content of at least 38%.
