The 2022 Grauer Burgunder Kalkmergel remains on the fine lees for a long time and is partly aged in small oak barrels. The age of the vines is 49 years, which naturally leads to low yields. The grapes were carefully hand-selected, destemmed, and left on the skins for four days to extract color, fruit, and aroma. The controlled fermentation and further aging took place in large and small oak barrels. After nine months of aging on fine lees and gentle filtration, bottling took place in June 2023.
