It's a good soloist on its own but also pairs well with dishes that have a good fat content, such as roast pork, grilled chicken, or green asparagus.\u003c\/p\u003e\n\u003ch3\u003eGunderloch – Winemaking\u003c\/h3\u003e\n\u003cp\u003eNackenheim is a small community in Rheinhessen. Grown on the terraces of the Nackenheimer Rothenberg, which lies at the northern end of the Roter Hang and, with 50-75%, is one of the steepest slopes of the Rheinfront, and the Nackenheimer Engelsberg. On the bright red soils of the Roter Hang, massive red slate with regional sandy, loamy structure prevails. Here, the Silvaner grapes grow in vineyards that capture the sun's rays practically all day, so the winemaker must be careful that the Silvaner doesn't become too rich. Canopy management and timely harvesting are important here. Here, too, the red slate soil literally sets the tone in the aroma profile.\u003c\/p\u003e\n\u003cp\u003eThe vineyards are managed close to nature, gently worked and maintained. Gentle pruning, natural fertilization, yield reduction through grape splitting and thinning, selective, manual harvesting in several passes are obligatory here. Fermentation occurs spontaneously on the skins with intercellular fermentation. The must oxidized until it was quite brown, which later helped the wine achieve more stability. The wine was aged in large wooden barrels and remained on the lees for a long time, which gave it a certain creaminess. The wine is unsulphured and unfiltered and is only produced in particularly good years.
