The vineyards, best plots in Penon \u0026 Graun with significantly reduced yields per vine (40 hl\/Ha), are located between 600 and 900 meters above sea level and benefit from the optimal conditions offered by the alpine climate with very large temperature differences between day and night, and the mineral, porous Dolomite soils of South Tyrol. Here, the grapes ripen under the Italian sun and in the clear mountain air of the Dolomites to their full splendor. The grapes from small-parcel vineyards are harvested by hand at the optimal ripening time for each grape variety and quickly brought in small boxes to the newly built, impressive winery in Kurtatsch. There, gentle pressing takes place according to the specifications of cellar master Erwin Carli.
