At the winery, grapes and mash are not pumped, but rather gravity-fed into the fermentation tanks. 75% of this white wine ferments in temperature-controlled stainless steel tanks. 25% ferments in 500l tonneaux with five months of lees aging, during which bâtonnage, the stirring of the lees, is practiced for three months.
