Due to these shifts, the region is now rich in various soil formations. Kirchberg on wind-blown, deposited loess on a steep slope, enriched with lime and other minerals. Cool winds from the Vosges lower temperatures overnight, allowing the grapes more time to ripen. Later, yield reduction is carried out by dividing bunches and thinning to one grape per shoot. Selective manual harvesting of the grapes takes place in several passes during the cool morning hours. In the winery, grapes and mash are not pumped but gravity-fed into the fermentation tanks. The Pinot Noir grapes first undergo 4 days of cold maceration, followed by traditional mash fermentation with manual plunging of the cap three times daily for about 12 days.
