The south-facing slope with shell limestone soils and a thick loess layer provides a complex minerality in the wine and is one of the steepest vineyards of the Klumpp winery.\u003c\/p\u003e\n\u003ch3\u003eWinemaking – Klumpp \u003c\/h3\u003e\n\u003cp\u003eIn order to harvest ripe grapes in autumn, optimal sun exposure is required, so Markus and Andreas Klumpp ensure early two-sided defoliation of the grape zone, followed by yield reduction through cluster splitting and thinning. The selective hand-picking of the grapes takes place in up to four passes. At the winery, grapes and must are not pumped, but flow into the fermentation tanks by gravity. There they ferment for 20 days at an average of 16°C. In the stainless steel tank, a slow, temperature-controlled fermentation takes place, as well as a two-month yeast aging.
