Markus and Andreas Klumpp therefore ensure early defoliation of both sides of the grape zone, followed by yield reduction through cluster splitting and thinning. Selective hand harvesting of the grapes takes place in four passes. In the winery, grapes and mash are not pumped but are moved into the fermentation tanks by gravity. Slow, temperature-controlled fermentation takes place in stainless steel tanks, as well as two months of aging on the lees.
