According to tradition, Les Petits Sablés are \"cut out\" with bronze moulds and baked on trays in the oven. After cooling, the apricot biscuits are removed by hand and packaged. In addition to the classic Sablés, La Sablésienne also produces biscuits with caramel, raspberry, chocolate, or caramel pieces.
