The animating acidity of the apple with well-integrated tannin notes results in a round and creamy character with a long, fresh apple finish and hints of fresh pine needles. Thus, the Hauxapfel Apple Sparkling Wine is not only a pleasantly dry aperitif, but also a great food companion for pan-fried goose or duck liver with apple or pear chutney, cured salmon with rösti, or roast beef with herb sour cream.\u003c\/p\u003e\n\u003ch3\u003eHauxapfel Apple Sparkling Wine – how it is made\u003c\/h3\u003e\n\u003cp\u003eThe Hauxapfel is an old apple variety, native to the orchards of the Swabian Alb. Around 1920, it was bred by Andreas Haux from Göppingen from the seeds of the Roter Trierer Weinapfel. After harvesting, the fruits at Manufaktur Jörg Geiger are first allowed to rest in closed boxes, where the ripening gas ethylene can concentrate and activate the enzymes. Only then are the Haux apples gently pressed and cold-fermented in stainless steel tanks. A portion of the resulting apple wine is stored in new barrique barrels, which gives the Hauxapfel apple sparkling wine even more structure and elegance. \u003c\/p\u003e\n\u003ch4\u003eTraditional Bottle Fermentation – at Manufaktur Jörg Geiger\u003c\/h4\u003e\n\u003cp\u003eThe second fermentation, which lasts between 12 and 16 weeks, takes place in the bottle. The Hauxapfel sparkling wine then remains on the lees in the bottle for at least 15 months to mature. Aromas of wine and yeast exchange, creating complexity. Only at the very end of the maturation period are the bottles, previously stored horizontally, riddled daily and placed a little steeper each time until the yeast plug has settled in the neck of the bottle after 43 turns.
