According to an old recipe, these are first allowed to \"sweat\" to develop their full aroma and scent. Only then are they gently pressed before the concentrated sweet juice is allowed to ferment. To preserve the natural sweetness and intense fruitiness, he stops the fermentation with high-proof pure pear brandy, resulting in an alcohol content of around 18% vol.\u003cbr\u003e\u003cbr\u003eThis is followed by at least 18 months of storage in new acacia barrels and largely in used Sauternes barrels, which allow the BP to mature and at the same time impart the aroma of great sweet wines without the wood being overly prominent.\u003cbr\u003e\u003cbr\u003eThrough oxidative maturation, the BP loses about 5% of its alcohol and one-eighth of its volume in the barrel.
