Try them!\u003c\/p\u003e\n\u003ch3\u003eMouettes d'Arvor – Gonidec's Premium Brand\u003c\/h3\u003e\n\u003cp\u003eConcarneau, on the Atlantic coast in southern Brittany, is home to Valérie and Jacques Gonidec, the third. Their Conserverie Gonidec is a family-run business that has been producing canned fish using traditional methods since 1959. Fresh, high-quality sardines, as well as other fish like mackerel and tuna, are caught off the coast of Brittany and then expertly cleaned, cut, and hand-packed into attractive tins with olive oil at the cannery, preserving them. In 1995, the cannery moved to new, modern production facilities. Since then, many specialties and new flavors have joined the traditional recipes, but the know-how about canned fish remains the same for all products.\u003c\/p\u003e\n\u003cp\u003eSardines are migratory fish, so sardine fishing is seasonal. In early spring, the famous sardines appear near the Breton coasts. Conserverie Gonidec has been sourcing freshly caught fish daily from fishermen in the harbor of the small town for 40 years.\u003c\/p\u003e\n\u003cp\u003eAs soon as the fish arrives at the factory, it is immersed in a saltwater bath with ice. This process, also known as brining, allows the sardine flesh to be scaled and firmed. Then, about forty employees manually trip, clean, and prepare the sardines. They are then showered and dried on racks before being fried in hot oil and then left to rest and drain overnight. The canning (Emboîtage) only takes place the next day, when the sardines are de-tailed and de-headed and placed into the tins by hand.
