This is then pressurized as in a pressure cooker. The effect is that the water starts to boil well below 100 degrees Celsius, preserving minerals and flavors. The resulting brine is brought to a boil in boiling pans, where the water slowly evaporates, leaving behind this wonderfully flaky sea salt from Nordur. And Nordur wouldn't be Nordur if the company didn't make use of Icelandic natural forces and work sustainably.
