But please don't be annoyed if, after 5 years, you only have one bottle of Oliver Zeter's Sauvignon Blanc Fumé 2023 left in your cellar.\u003c\/p\u003e\n\u003ch3\u003eSauvignon Blanc Fumé – Oliver Zeter Signature Wine\u003c\/h3\u003e\n\u003cp\u003eThe grapes from Oliver Zeter's best vineyards are hand-sorted, spontaneously fermented without prior must clarification, and exclusively aged in 300 and 500-liter wooden barrels. After a long period of lees aging until summer, the wines are bottled unfined before autumn. The complexity of these wines is the focus here, encased by the subtle expression of the wooden barrel. The result is a Zeter Signature Wine with depth, elegance, and structure. Give it some time; the Fumé ages wonderfully.\u003c\/p\u003e\n\u003cp\u003eA total of eight vineyards in the Southern Palatinate and along the Mittelhaardt are planted with seven different Sauvignon Blanc clones. A decisive advantage here is the different microclimates of the various sites, which has a positive effect on the diversification of aromas. The soils on which the vines grow are as diverse as the sites. The vines are mostly cordon-trained, which leads to a more linear and thus easier-to-manage grape zone. The vineyards are permanently green, partly with natural herbs and partly with grass seeding.\u003c\/p\u003e\n\u003cp\u003eThe \"Fumé\" always comes from Oliver Zeter's oldest and best vineyards; only the finest and ripest grapes are selected and hand-picked into small, 20-kilo boxes. The grapes were then destemmed and pressed. The juice was immediately transferred to new and used French oak barriques, where the must underwent spontaneous fermentation. Malolactic fermentation was prevented.
