After a long lees aging until summer, the wines are bottled unfined before autumn. The complexity of these wines is the focus here, framed by the delicate expression of the wooden barrel. Three vineyards in the localities of Edenkoben, Diedesfeld, and Hambach are planted with this variety as an experimental cultivation. The training is done as a cordon, which results in a linear and thus easier-to-manage grape zone. Nevertheless, the cultivation of this variety in our latitudes proves to be very labor-intensive due to its enormous fertility. The vineyards are permanently greened, partly by natural herbs and partly by targeted sowing.\u003c\/p\u003e\n\u003cp\u003eHarvesting took place as late as weather and the health of the grapes allowed. Grapes were harvested in small, 20 kg crates. Subsequently, the grapes were crushed and pressed. The juice was immediately placed in used French oak barriques – where the must was then spontaneously fermented.
