After a long lees aging until summer, the wines are bottled unfined before autumn. The focus here is on the complexity of these wines, framed by the subtle expression of the wooden barrel. Three vineyards in the locations of Edenkoben, Diedesfeld, and Hambach are planted with this variety as an experimental cultivation. The training is done as a cordon, which results in a linear and thus easier-to-manage grape zone. Nevertheless, cultivating this variety proves to be very labor-intensive in our latitudes due to its enormous fertility. The vineyards are permanently greened, partly by natural herbs and partly by targeted seeding.\u003c\/p\u003e\n\u003cp\u003eThe harvest took place as late as the weather and the health of the grapes permitted. The grapes were harvested in small, 20-kilo crates. Afterwards, the grapes were crushed and pressed. The juice was immediately placed in used French oak barriques – there, the must was then spontaneously fermented.
