Single-cane training, green harvesting, and manual canopy management contribute to yield reduction and thus to quality improvement. An ecological nutrient cycle is achieved through green manuring. Lightly crushed, the grapes remain on the skins for 6 hours to extract the delicate varietal aromas from the berry skins. This is followed by gentle pressing. The subsequent fermentation took place in stainless steel tanks at approx. 18 °C sur lie and proceeded very slowly to preserve the fruit.
