Single-cane training, green harvesting, and manual canopy management contribute to yield reduction and thus to quality improvement. An ecological nutrient cycle is achieved through green manuring. Lightly crushed, the grapes remain on the mash for 6 hours to extract the fine varietal aromas from the grape skins. This was followed by gentle pressing. The subsequent fermentation took place in stainless steel tanks at approx. 18 °C and proceeded very slowly to preserve the fruit.
