The KALK \u0026amp; STEIN 2023 Chardonnay from Weingut Rings offers yellow fruit and wild herb notes on the nose, and is cool, mineral, and dry on the palate – minimally sulfured and unfiltered after 15 months on the lees. It's striking how well the Kalk \u0026amp; Stein performs without Pinot Blanc – leaving no sense of something missing!\u003c\/p\u003e\n\u003ch3\u003eRings – Winemaking\u003c\/h3\u003e\n\u003cp\u003eThe Rings brothers place great importance on healthy soils, as only from these can healthy vines grow and healthy grapes develop. They begin early with sowing buckwheat, clover, and radish, which prevents soil erosion, attracts beneficial insects, and retains moisture in the soil, which is revitalized with the application of horse manure as a natural fertilizer. Canopy management is also important for the quality of the wine: double shoots are manually removed, and depending on the weather, the grapes are defoliated and thinned to ensure good ventilation. Each grape variety is hand-harvested at the optimal time, fermented, pressed, and aged separately, and only blended shortly before bottling. The grapes for the Rings Kalk und Stein are hand-picked and selected at the optimal harvest time, and partly pressed as whole clusters. After a short maceration period, natural yeasts are allowed to work and initiate spontaneous fermentation. The wine is aged for 15 months on its full lees in large oak barrels, which Andreas and Steffen master exceptionally well. This makes the wine more complex, multi-layered, and aromatic in a positive sense.
