These sites are characterized by a rather cooler climate as well as limestone and marl soils. This is where wines are produced that are shaped by the soil and their origin. The Kallstadt Riesling from limestone rock is incredibly juicy, showing apple, quince, and apricot, in addition to limestone + chalk minerality, then fresh lime and cooling mint. A wine so typical of the style of the two Rings brothers: cool, lean, mineral, purist – simply great.\u003c\/p\u003e\n\u003ch3\u003eRings – Winemaking\u003c\/h3\u003e\n\u003cp\u003eThe Rings brothers attach great importance to healthy soils, as only from them can healthy vines stand and healthy grapes grow. They start early by sowing buckwheat, clover, and radish, which prevents soil erosion, attracts beneficial insects, and retains moisture in the soil, which is revitalized by spreading horse manure as a natural fertilizer. Canopy management is also important for the quality of the wine: double shoots are removed manually, and depending on the weather, the grapes are defoliated and thinned out to aerate them. The grapes are hand-picked and selected at the optimal harvest time and pressed as whole clusters. 5,000 L\/Ha are harvested. After a short maceration period, natural yeasts are allowed to work and initiate spontaneous fermentation. The wine is aged 90% in large wooden barrels, which Andreas and Steffen handle very well, and 10% in stainless steel tanks. This makes the wine more complex, multifaceted, and aromatically richer in a positive sense.
