The organic white wine shows aromas of gooseberry, honeysuckle, freshly cut grass, green pepper and a hint of pepper. On the palate, it is grippingly mineral with prominent acidity and length, while offering plenty of juiciness and fruit and a long finish.\u003c\/p\u003e\n\u003ch3\u003eRings – Winemaking\u003c\/h3\u003e\n\u003cp\u003eThe Rings brothers place great importance on healthy soils, vines and grapes. They start early with sowing buckwheat, clover and radish, which prevents soil erosion, attracts beneficial insects and retains moisture in the soil, which is revitalized with the application of horse manure as a natural fertilizer. Canopy management is also important for the quality of the wine: double shoots are manually removed, and depending on the weather, the grapes are defoliated and thinned to aerate them. The grapes are hand-picked and selected in several passes at the optimal harvest time, and some are pressed as whole clusters. After a short maceration period, natural yeasts are allowed to work and initiate spontaneous fermentation.
