The 2024 Knipser Grauburgunder is a beautiful example of the perfect combination of power and elegance.\u003c\/p\u003e\n\u003ch3\u003eWinemaking – Weingut Knipser\u003c\/h3\u003e\n\u003cp\u003eThe Grauburgunder from Weingut Knipser comes from two sites characterized by a mighty loess layer. Limestone is found in the subsoil. The selective hand-picking of the Grauburgunder grapes in autumn usually takes place in several passes to harvest optimally ripe fruit. At the winery, all grapes are destemmed, meaning freed from their stems. The resulting mash remains cooled overnight in the tank press under exclusion of oxygen before being gently pressed. Fermentation takes place at a temperature-controlled below 20°C in stainless steel tanks, which preserves the fruitiness, but also the varietal typicality.
