The selective manual harvest of the Sauvignon Blanc grapes in autumn usually takes place in several passes to ensure optimally ripe grapes are picked. At the winery, all grapes are destemmed, meaning the stems are removed. The resulting mash remains chilled overnight in the tank press, excluding oxygen, before being gently pressed. Fermentation takes place at a temperature-controlled below 20°C in stainless steel tanks, which preserves the fruitiness and the varietal typicality.
