Vincotto has been part of culinary culture in Southern Italy for centuries. The grape must is carefully cooked down until it is dark, dense, and aromatic. Gianni Calogiuri refines this must into an elegant Aceto and ages it for years. The result is a seasoned vinegar with its own signature: soft, complex, and intense, without being overpowering.
