Francis Miot – King of Jams
Francis Miot began his career as a self-proclaimed jam lover with an apprenticeship as a pastry chef. Several internships with various jam manufacturers and a great deal of his own creativity led him to his secret of making jam.

Good jam starts with good fruit, says Miot, who sources his fruit from the smallest possible regional producers. They must be ripe, but not overripe. Miot expressly does not cook his French jams and marmalades according to grandma's recipe, because in the past too much sugar was usually used and it was cooked for too long. To preserve the fresh and original taste of the fruit, Francis Miot cooks his jams and marmalades only briefly. The sugar is heated and only then are the fruits added. Real lemon is also important to him; it ensures the right gelling power of the sugar, thus bringing sweet temptations into the jar.
In France, Francis Miot, who has been honored several times as a jam and confectionery manufacturer, is well known and respected as the King of Jam. We were particularly impressed by the orange marmalade with whisky.
