The company Kirnig Südtiroler Edelpilze was founded in 2017 by Andreas Kalser and Josef Obkircher in Aldein, South Tyrol. Special features of Kirnig mushroom cultivation
At the startup Kirnig Südtiroler Edelpilze, wood chips, not straw, are used as a substrate for the mushroom mycelium. This traditional method offers numerous advantages. It provides an ideal nutrient source and allows the mushrooms to grow naturally, leading to a more intense flavor and better texture. In addition, wood substrate cultivation promotes sustainability, as wood is a renewable and regionally regrowing raw material.
Now, the temperature, humidity, CO2 content, and light intensity in the growth rooms specially built for mushroom cultivation in the "old barn" at "Hof im Thal" must be kept constant to create the best growing conditions for the cultivation of high-quality organic king oyster mushrooms, organic oyster mushrooms, and shiitake mushrooms. For example, the shiitake mycelium takes about 15 to 20 weeks to germinate and then another week until the mushrooms can be harvested by hand. The delicious organically grown mushrooms are free from pollutants and pesticide residues.
