L’Epicurien – Artisanal Jam
L’Epicurien, the artisanal jam producer, is based in Le Bosc, a small village in Languedoc, Southern France. Not far from the small jam production facility is Lac du Salagou, a beautifully situated lake that is well worth a visit. Coming from the sea, you drive inland on the A 75, further into the mountains. Here, the landscape is rugged, limestone rocks jut out of the ground, and there's the scent of garrigue, this typical scrubland formation of rosemary, thyme, lavender, and sage. This is a good place to turn the good fruits, which are regionally sourced for L'Epicurien, into jam using semi-mechanized production. The fruits are purchased at optimal ripeness, hand-sorted, and slowly deep-frozen, so that after the equally slow thawing, they appear almost fresh. As needed, L'Epicurien then cooks them in small batches with little sugar into aromatic jams, which are then filled into octagonal jars. L'Epicurien, artisanal French jam.
