Filotea — la Pasta Artigianale

Filotea, la Pasta Artigianale, is made according to the traditional Marchigiana recipe, because the Italian region of Marche has long been known for making pasta. Filotea pasta is still made today as it was then by the experienced hands of grandmothers: durum wheat semolina is mixed with 00 wheat flour and plenty of fresh, free-range eggs – no water is added, the moisture from the eggs is sufficient to knead a smooth dough. The selection of flour from the region is just as important as the fresh eggs. This results in artisan pasta with the authentic taste of Marche.
The dough is traditionally extruded through bronze dies, which makes the surface rough and gives the ribbon noodles the ability to absorb sauce better. The art of slow drying at low temperatures ensures the tenderness of the cooked pasta and unique flavors.
