The Sugo al Basilico by Filotea is a ready-to-use tomato sauce with basil, made from sun-ripened tomatoes, extra virgin olive oil, and just a few other ingredients. Quickly heated, it is ideal for any pasta shape from the house.

Anyone looking for Sugo al Basilico wants a ready-made Italian tomato sauce with basil, classically served with pasta. This Sugo al Basilico by Filotea is made from sun-ripened tomatoes, extra virgin olive oil, sea salt, a little sugar, a hint of garlic, and aromatic basil, crafted in the manufactory in Ancona, in the Marche region. Six ingredients—this sauce needs nothing more.

Sun-ripened, with fresh basil

The difference compared to many ready-made sauces lies in the list of ingredients: no thickeners, no artificial flavorings, only 6 ingredients in total: tomatoes, oil, salt, a little sugar, garlic, and basil. It is precisely this reduction that ensures a taste that actually tastes like tomato and not like a spice mix.

Fruity, savory, fresh—three characteristics that come primarily from the basil, which is added to the sauce late in the process so that its aroma is not lost through long cooking. In most industrial ready-made sauces, however, the herb is cooked from the start, causing it to lose much of its aroma.

The sugo is heated in 3 to 5 minutes, significantly faster than a homemade tomato sauce, which often needs 30 minutes or longer to properly reduce. A 280g jar is usually plenty for 2 to 3 servings of freshly cooked pasta.

For any pasta shape from the house

Classically, this sugo goes well with simple long noodles like Spaghettoni, but it works just as well with short tube shapes like Rigatoni, which catch the sauce inside. The basil note also harmonizes well with egg pasta like Tagliatelle without overpowering it, as it remains subtle enough not to drown out the intrinsic flavor of the pasta.

Briefly warmed, stretched with a splash of pasta water, and stirred with a spoonful of cold butter at the end, the sauce becomes creamier without diluting the tomato flavor. For those who prefer it more rustic, grate fresh Parmesan directly over the finished plate.

Why Filotea also makes sughi today

For years, Filotea exclusively produced pasta, until the obvious question arose: anyone who makes good pasta should also be able to offer a suitable sauce to go with it. Thus, alongside the more than 24 pasta shapes, several sughi and pestos were gradually added to the range, made with the same commitment to few, high-quality ingredients. This is exactly the standard, says Francesco Severoni: a sauce should support the pasta, not distract from it.

Packaged in a box with the typical Filotea branding, the Sugo al Basilico, much like some of the house's pasta shapes, also makes a great small gift for pasta lovers who already know all the shapes. The manufactory in Ancona, in operation since 2005, processes the tomatoes in small batches rather than producing them in bulk over several weeks.

Heated in the pan with a little pasta water

Heat gently for 3 to 5 minutes, mix with freshly cooked pasta, and sprinkle with Parmesan as desired—best when brought to a boil directly in the pan with a little pasta water.
