The Knipser Grauburgunder 2025 from Weingut Knipser in Laumersheim is a mineral, genuinely honest VDP. Winemaking – Weingut Knipser
The Grauburgunder from Weingut Knipser comes from two sites characterized by a powerful loess overlay. Below lies limestone. The selective hand-picking of the Grauburgunder grapes in autumn usually takes place in several passes to harvest optimally ripe fruit. At the winery, all grapes are destemmed, meaning freed from their stems. The resulting mash remains chilled overnight in the tank press, excluding oxygen, before being gently pressed. Fermentation takes place at a temperature-controlled below 20°C in stainless steel tanks, which preserves the fruitiness and also the varietal typicity. Aging on the fine lees also largely takes place in steel tanks, with a portion of the Grauburgunder being aged in used barriques, which gives the estate wine more richness and complexity.
