Pollastrini - Sardines with Chili - in Olive Oil
Pollastrini sardines with chili in olive oil are something special, as they come from the only oil sardine producer in Italy. The Sardine di Anzio have a spicy taste and a pleasantly firm texture. The sardines with chili in olive oil enhance any appetizer plate, taste great with bread and dry white wine, but also on pizza or with a crisp green salad.
Canned Sardines from Anzio, Italy
Even though fish is on the menu in almost every region of Italy, there is only one Italian producer of canned sardines. At Sardine Pollastrini in Anzio, a port city an hour's drive south of Rome, only sardines caught directly off the coast in the Mediterranean are processed, and this has been the case since 1889.
Sardines, small fish with shimmering silver bellies, multiply well in the Mediterranean, so they can be fished throughout the season. The sardines for the Pollastrini cannery are still caught with the Gozzo, a brightly lit boat that lures sardine shoals to the surface at night. The next morning, the freshly caught sardines are hand-sorted, gutted, and cleaned. They are hand-cut into shape and placed in nostalgic cans as sardines with chili, with red chilies and olive oil.
You should turn the cans occasionally so that the sardines are evenly soaked in the olive oil.
