Canned Sardines from Anzio, Italy
Even though fish is on the menu in almost every region of Italy, there is only one Italian manufacturer of canned sardines. At Sardine Pollastrini in Anzio, a port city an hour's drive south of Rome, only sardines caught directly off the coast in the Mediterranean are processed, and this has been the case since 1889.
The sardine, a small fish with a silvery belly, reproduces well in the Mediterranean, so it can be fished throughout the season. The sardines for the Pollastrini cannery are still caught with the Gozzo, a brightly lit boat that lures sardine shoals to the surface of the sea at night. The next morning, the freshly caught sardines are sorted by hand, gutted, and cleaned. They are cut into shape by hand and packed as sardines in olive oil into nostalgic cans.
You should turn the cans occasionally so that the sardines are evenly soaked in the olive oil.
