PURO Condimento Rosé is a light balsamic seasoning from the Alico family manufactory in Sorbara near Modena, home of Italian vinegar tradition since the late 1980s. Matured on the basis of concentrated grape must and wine vinegar and delicately colored pink with a plant extract, it shows a mild sweet-sour balance that reminds you more of a summer wine than a classic dark aceto. A young alternative for your light cuisine.

Delicate pink, fruity, light-footed

From the bottle, the PURO Rosé flows in a light raspberry hue, carries an aroma of stewed berries and finishes with a slightly fruity sweetness. Let yourself be surprised how much character can reside in a pink seasoning. That's how balsamic is done in summer.

The aroma is reminiscent of ripe raspberries, a hint of strawberry, the fresh suggestion of a quince. The Puro Condimento alimentare Rosé plays around with its acidity, the grape must concentrate, without dominating it. The consistency is fine and syrupy.

What distinguishes it from classic dark aceto is its light character – it retreats where its black brother likes to push to the foreground. You can dose it like a good wine: 3 to 5 drops are enough, it doesn't want more. A seasoning with good manners.

Enjoy it with summer salad and strawberries

Light summer cuisine calls for rosé, even when it comes to vinegar – a few drops over mixed green salad with goat cheese, over steamed fish, over strawberries with vanilla ice cream.

It shows particularly beautifully with fish carpaccio or raw tuna, where its delicate tone does not overpower the fine inherent taste. With light meat such as veal or chicken breast, it gives a fruity edge that does without heavy sweetness. Also try it over ripe peaches with a few drops of good olive oil and a pinch of coarse sea salt – that's summer on a plate.

In pastry making, it develops its second talent. Panna cotta, goat cheese mousse and white chocolate parfait are elevated to another league by 2 to 3 drops of PURO Rosé. Also with strawberries, raspberries or marinated grapes – fruit meets fruit and both elevate each other.

Alico from Sorbara, since the late 80s

Alico is a family-run Acetaia from Sorbara near Bomporto, in the heartland of Aceto Balsamico di Modena. Founded in the late 1980s to combine family tradition, expertise and passion for balsamic under one roof.

The manufactory works in small batches, far from industrial mass production, and is part of the Consorzio Tutela Aceto Balsamico di Modena IGP. The PURO line is Alico's own design beyond the classic IGP obligation – seasonings that do not follow the old formula, but appear in three profiles: dark, white and rosé. The Rosé Condimento is the youngest and lightest variant, designed for light cuisine.

Today, Alico carries over 20 balsamic products in its range. In addition to the PURO series, the brands Fattoria Estense and Lodovico Campari run under the same roof – those who want to sample the range will find the dark IGP balsamic there – young or aged. All respect for a house that continues classic craftsmanship with a clear head.

Enjoyment tip

Our tip: Store the PURO Rosé cool and dark at 10 to 15 degrees, then the fruit notes will remain present for many months. Just a few drops are enough – over summer salad with goat cheese and walnuts, over strawberries with vanilla ice cream, over grilled fish with fresh herbs. The opened 250 ml bottle will keep closed for up to 12 months, so that your fine fruit is preserved.
