Fruity Aceto Balsamico Bronze from Modena

The Aceto Balsamico di Modena IGP Bronze from Fattoria Estense is the first maturation stage of their quality series, a Riserva with a fruity aroma and delicate consistency. Dark brown, glossy, with no caramel coloring. Not a heavy syrup, but a light, fruity balsamic for dressings and everyday cooking.

Aceto Balsamico di Modena IGP Bronze from Fattoria Estense is the bronze-level of the range, a Riserva from Cogneto in Emilia-Romagna. With a density of 1.19, it still pours easily and smoothly, dark and glossy, with 6% acidity balanced against its fruity sweetness. The fruity entry into the house's aged balsamics.

Fruity, delicate, dark and glossy

It shimmers dark brown in the glass, with notes of cooked grape must and red fruit on the nose. On the palate, 6% acidity and a fruity sweetness in a calm flow. It is fruity, delicate, and light – a balsamic without any heaviness.

The producer describes it aptly: "With a delicate consistency, it releases a distinct fruit aroma." That is exactly what it is – the lightest of the four color levels, dark in the glass, fruity on the tongue, with an aroma of cooked must. Anyone who only knows balsamic as a thick, dark syrup will discover its light, fruity side here. A balsamic that brings a good mood to any dressing.

In vinaigrettes and for dipping

In a salad vinaigrette with good olive oil, the Bronze shows its round side – or simply with oil in a small dish for dipping with bread. That’s what winding down tastes like.

It pairs well with crunchy leafy greens, roasted vegetables, and mild cheese; a few drops also lift a tomato sauce or pumpkin soup. Stir it with a fruity olive oil from Bartolini using a ratio of three parts oil to one part vinegar, plus a little salt. Fried mushrooms or a fried egg can also handle a few drops if you’re in the mood. For heavier, thicker tasks – like tomato-mozzarella or aged cheese – reach for the Aceto Balsamico Silver or Gold, which are denser from the barrel.

Riserva from Cogneto in Emilia-Romagna

The family business Fattoria Estense ages its balsamics in wooden barrels in old vaults near Cogneto. The Bronze carries the Riserva quality label and stands at the beginning of the colored maturation ladder, before Silver and Gold. Bronze, Silver, Gold – the three colors mark the maturation in the barrel, and the Bronze makes the fruity start.

Concentrated solely through cooked grape must, without caramel coloring or artificial dyes, it reaches a density of 1.19 – lighter than the higher levels, but emphatically fruity. Some of the vinegar blends in the house are stored for over 10 years before they go into a cuvée. The Bronze shows that a good Riserva does not have to be heavy – fruit over force. Its fruitiness comes from the cooked must, not from a sugar pot, and you can taste it. The acronym IGP stands for the Protected Geographical Indication, which has been monitored by a consortium in Modena since 1993.

If you would like to move up the maturation ladder, you will find Silver, Gold, and Lodovico Campari in the Fattoria Estense range, as well as other Aceto Balsamico di Modena IGP in our shop. Start here and work your way up if you like. The 250 ml bottle is enough for many salads – a fruity everyday companion at the great price of the Bronze level.
