Questions about Habanero Mango Aioli?

Habanero Mango Aioli by Stonewall Kitchen, fruity and spicy

Habanero Mango Aioli by Stonewall Kitchen is the fieriest mayonnaise in the range, built on rapeseed oil and egg and sharpened with an oil made from Habanero peppers. Mango concentrate, tomato, and raisins provide the fruitiness underneath, which carries the fire instead of extinguishing it.

Habanero Mango Aioli is the spicy mayonnaise from Stonewall Kitchen in Maine, USA. In the 500-gram jar, the Habanero oil sits on a creamy base of rapeseed oil, egg, and white wine vinegar, with added tomato, cane sugar, and a hint of curry for a dark spice.

First the fruit, then the fire

Rich orange, thick and glossy, it looks completely harmless on the spoon at first. The color comes from the ingredients themselves—tomato, curry, and the reduced fruit.

On the palate, it begins with sweetness, carried by cane sugar and mango concentrate, to which the raisins add a darker, almost dried-fruit note. Tomato and vinegar provide the acidity, while the curry brings a broad warmth.

And then the Habanero kicks in—slowly, steadily, and it stays. The heat builds over several seconds, warming rather than stinging, and only fades long after it's time for the next bite. This exact long-lasting arc is what distinguishes it from a chili sauce that is loud for a moment and then has nothing more to say.

On burgers, with fries, next to grilled food

Its place is wherever something savory can handle a sweet-and-spicy counterpart.

A streak on a burger, a dollop next to fries and sweet potato wedges, a spoonful with grilled meat or shrimp: that’s how it’s used. It also makes an appearance on toasted bread, in wraps, or alongside nachos.

Fish tacos, grilled corn, and cheese sandwiches get a noticeable lift from it, and when folded into warm potato cubes, it becomes a dressing for a summer salad. Because the pepper means business, start with half a teaspoon and stir it with some plain yogurt or cream cheese to mellow it out.

The Chipotle Aioli is significantly smokier and much milder. The entire range can be found under aiolis and mayonnaises.

Why heat travels further in oil

Capsaicin, the substance behind all chili heat, dissolves in fat and hardly at all in water.

Stonewall Kitchen therefore steeps the peppers in olive oil first and then stirs this oil into the mayonnaise. The fat distributes the heat evenly throughout the spoonful rather than letting it flash in individual spikes, while simultaneously making it last longer.

For the same reason, a glass of water afterward helps very little, whereas milk, yogurt, or a piece of bread helps much more. The Habanero itself comes from the Yucatán Peninsula and the Caribbean, where its floral, almost apricot-like aroma has been prized for centuries.

The most popular in the range, and by design

Among the mayonnaises from this brand, most of our customers reach for this exact jar, even though it is the spiciest on the shelf. At a barbecue, a dollop on a steaming burger is enough, and everything else takes care of itself. Once opened, the jar should be kept refrigerated and will last for several weeks. You can find the other varieties that Stonewall Kitchen stirs up in Maine in the Stonewall Kitchen range.
