Hacienda El Rosario is a dark chocolate from Chocolat Bonnat in Voiron, France, made from 75 percent cacao from a single estate. This 100-gram bar tastes like this plantation and no other: bright, fruity, and full of life.

Bright fruit, fresh acidity, dark core

The fruit comes through clear and unadorned, accompanied by an acidity that awakens the palate and keeps it alert.

Beneath this lies a robust core that supports the freshness and gives it weight, ensuring nothing tastes thin or watery. The snap is clean, the melt is long, and the interplay between fruit and depth keeps you engaged over several pieces.

The fruit notes pair naturally with a medium-bodied red wine. It stands up surprisingly well to aged cheese with a bite, as the acidity picks up the salt and both elevate one another.

One plantation, one bar

Plantation chocolate means that the beans come from a single estate rather than just a region or a country.

Hacienda El Rosario is located in northwestern Venezuela, near the port city of Maracaibo, where humid warmth drifts in from the lake and the trees bear fruit all year round. Because only this estate supplies the beans, the taste fluctuates slightly from harvest to harvest, and that is precisely the intention.

Chocolat Bonnat sources directly from there and eschews any additives. Anyone who tastes the bar years apart will taste the difference between two vintages.

The cacao tree bears its fruit directly on the trunk, and each pod provides only a handful of beans. What happens to them afterward determines more than just the roasting: during fermentation, when the pulp surrounding the bean ferments, the precursors to almost all the flavors one tastes later are created.

Drying on wooden beds by the lake

After fermentation, the beans are placed on flat wooden beds that can be slid under a roof when it rains.

This slow air-drying process takes days and determines whether the fruitiness remains clear or turns dull. If dried too quickly, the outer shell of the bean seals while the inside remains moist, and even the best roasting cannot fix that later on.

Dark chocolate for cheese and wine

Serve it in thin bars rather than large pieces so that there is plenty of room for everything between the cheese and the wine.

There are three ingredients on the list—cacao, cocoa butter, and sugar—with cacao accounting for three-quarters of the total. Anyone who crafts a bar with so little sweetness cannot hide any weaknesses in the bean.

Venezuela is considered by connoisseurs to be the country with the finest cacao varieties in the world, and the names of individual plantations there carry the same weight as an estate name does for wine in France.
