Niaouli Honey – from Madagascar

The Niaouli is a tropical tree that can grow up to 32 meters high. It grows in the large coastal regions in eastern Madagascar along the Indian Ocean. It is characterized by its white flowers, whose bloom lasts 45 days, from January to February, and which look like small bottle brushes. The bark is also very special, consisting of many paper-thin layers that peel off irregularly. The Malagasy people are extensive users of essential oils; they know the extraordinary properties of the Niaouli tree, whose flowers are sought after and loved by perfumers worldwide. The honey harvested here is initially liquid and quite dark. With crystallization, it becomes lighter and takes on a caramel-like color.
