Sawade 250g Marzipan Loaf with a thin chocolate coating
The 250g Marzipan Loaf from Sawade is a large loaf of premium marzipan encased in a thin layer of fine dark chocolate. In this version, the almond profile is even more pronounced than in the smaller format, giving it a nuttier taste while the cocoa serves as a subtle base note.
The 250g Marzipan Loaf is the classic large Berlin marzipan loaf from Sawade in Reinickendorf, wrapped in gold foil and completely coated in dark couverture chocolate. It weighs twice as much as the smaller size and is meant to be sliced, ensuring there is enough for everyone to enjoy a piece on the Christmas platter.
Where the almond has the final say
As you unwrap the foil, a scent of almonds rises and lingers as long as it sits out on the board. Once sliced, you are presented with a dense, light-beige mass that remains moist without sticking to the blade.
A smooth, warmed knife cuts cleanly through the dark rim instead of letting it crumble. What remains after swallowing is nutty and slightly oily, as the sweetness has long faded and only the aroma remains.
The almond takes command from the very first slice, with the cocoa merely providing a dark, bitter, and dry base note without pushing to the front. If you find the smaller loaf too chocolatey, you will appreciate the different balance in this larger size.
You can see the hand in the edges
Every loaf is hand-shaped by the confectioners at Sawade rather than pressed into a mold, a detail still visible in the slightly irregular edges.
It is then dipped in dark couverture, and the larger format retains less chocolate than the smaller one. This is exactly what brings the almond to the forefront, while the cocoa takes a step back, as the coating is spread over more mass.
In the raw paste, the almond takes precedence over the sugar; it is sourced from the Mediterranean region, as those varieties provide marzipan with its signature bitter undertone. The company deliberately avoids artificial flavors, preservatives, and palm oil—ingredients that would be hard to hide in a recipe with only seven components.
A loaf meant for sharing
On a Christmas platter alongside gingerbread and speculoos, the large loaf takes center stage because it can be sliced and doesn't disappear in a single bite. A dry sherry helps balance its sweetness.
Slice it just before serving so the cut surfaces do not dry out, and wrap the foil loosely around the remainder afterward. Stored in a cool, dry place, the texture remains supple for weeks, whereas the refrigerator causes it to contract and become brittle.
That this confection is called "bread" comes from its shape, not its dough, as nothing here is baked. The name has been used in Berlin for generations and accurately describes what lies on the board: a bar to be sliced rather than a bar to be broken.
If you prefer a smaller size, the 125g Marzipan Loaf is available, and the same loaf is also available with orange for a citrusy twist. You can see what else Sawade crafts at Sawade Berlin, and dark chocolate bars are ready for you in our Chocolate collection.
