Ginster praline box by Sawade with spring motif
The Ginster praline box by Sawade is the spring edition of their classic ten-piece box, 120g in five varieties. Truffles and nougat sit side by side, each piece decorated by hand, and the lid is painted all over with yellow broom blossoms.
The Ginster praline box is the non-alcoholic spring selection from Wittestraße in Berlin-Reinickendorf, ten pieces by Sawade on a golden base in dark paper cups. Whoever gives them as a gift is placing a bouquet on the table that can be opened up, and even children can help themselves at the Easter table without asking.
A crunch of crystal sugar, then nougat
The Lukullische is a nougat truffle that is rolled in fine crystal sugar while still warm, and this coating is the first thing you hear. Coarse sugar would be too loud, powdered sugar wouldn't make a sound at all, and in between lies exactly this grain size.
It crunches softly, gives way, and then lets through the nougat, which follows, soft and roasty. Because the sugar hits the still-warm couverture, it settles unevenly; while it could be done more smoothly by machine, the sound would then be lost. One piece in two bites, and a few grains of sugar remain on your finger.
The butter truffle underneath is the dark calm in the field, whipped and finely drizzled with milk chocolate. The Bourbon vanilla truffle stands next to it in white chocolate, bringing a warm, almost powdery sweetness, while the pistachio nougat wears its green nut openly on top. The Königin Luise layers brittle, nougat, and fine marzipan on top of each other.
Whipped melts faster than poured
A ganache can be poured or whipped, and at Sawade, it is whipped because air in the mixture shortens the melt.
Whipped, it melts faster and lies more lightly on the tongue instead of feeling heavy. Next comes the piping bag, as these truffles are piped and coated individually, and the cooler the workshop remains during this process, the cleaner the peak stands.
Spiking, drizzling, rolling, crowning with a whole nut – each of the five varieties receives a different final touch. That is why no two boxes look exactly the same, and anyone who places two side by side will find the differences in half a minute. The dark paper cups keep every decorated top clear so that nothing gets smeared when taken out.
Ten pralines for the Easter table
The Ginster box pairs well with light tea, rhubarb juice, and an afternoon with the patio door left open. The yellow blossoms are painted right to the edge, so the lid looks like spring from the doorstep, and no one has to ask what was in the bag.
Ten pieces is the size to bring when you aren't staying for dinner, and they fit flat in any bag. Between 15 and 18 degrees, the sugar coating remains dry; in the sun on the Easter nest, it becomes sticky within an hour. Hazelnut and pistachio are found in several varieties, and Sawade deliberately avoids palm oil as well as artificial flavors or preservatives.
