Sawade Hazelnut Nougat Chocolate Truffles are praline balls featuring dark roasted hazelnut nougat enrobed in fine dark chocolate. The filling contains only sugar, cocoa, and hazelnuts, making it dairy-free and the most intense variety in the Berlin winter collection.
Hazelnut Nougat Chocolate Truffles are the darkest praline balls from Sawade in Berlin-Reinickendorf. Each weighs 16 grams and is individually wrapped in blue paper like a candy. We pack five pieces in a cellophane bag and tie it with a cream-colored ribbon, ready for your Advent platter.
Tart at first, then the hazelnut
The dark shell gives way with a dry snap, revealing a filling without any graininess that slowly melts on the tongue. First, the cocoa emerges, tart and dry, followed by the roasted hazelnut, which takes center stage and lingers.
Roasting, cocoa, nut—three notes in a single bite, with none crowding out the others. Those who usually reach for milk chocolate pralines will notice the difference with the second chew, as this filling lacks the milk powder that typically rounds out and softens such centers.
Taken straight from a cold hallway, this truffle offers little, as cold nougat holds back its aroma. Place the bag on the table a quarter of an hour before serving; the filling will then open up, and the scent of roasting will fill the room as soon as the first wrapper is twisted open.
One minute of roasting makes all the difference
Nougat is created when roasted hazelnuts and sugar are milled until all traces of graininess disappear. The further the roasting process goes, the darker and drier the flavor profile becomes.
This requires precise monitoring, as just one minute too long results in a bitterness that has nothing to do with cocoa. Sawade takes the roasting further for this variety than for their mild winter fillings, and the dark chocolate shell complements this intensity rather than mellowing it out.
After sugar, hazelnut is the second ingredient, and that exact order is reflected in the taste. There is no milk in the filling, so the truffle is inherently vegan, and there is no alcohol either, making it perfectly safe for children to enjoy from the Advent platter.
Wrapped like a candy
At the Wittestraße facility, Sawade rotates the molds until the shell is of uniform thickness, and only then is the nougat added. Finally, the blue paper is twisted into star-shaped ends—the house's oldest packaging method—which keeps out light and air.
The company adheres to a policy of using no palm oil, artificial flavors, or preservatives, which would be immediately obvious in a recipe with such few basic ingredients. On the table, such a bag makes little fuss, yet it is usually the first to be opened because of the blue glimmering through the cellophane.
This truffle pairs beautifully with espresso, strong black tea, and the final half-hour of a long evening. Store it in a cool, dark, and dry place to keep the shell glossy; near a heater, it will turn gray, and in the refrigerator, it will develop condensation upon removal.
