Organic Sour Cherry fruit spread is an organic cherry jam from Alpe Pragas in the Prags Valley of South Tyrol. With 65 percent fruit, the sour cherry fills the 220-gram jar; it is sweetened with agave syrup, with added lemon juice and apple pectin.
Tart cherry, dark and enlivening
Upon opening, the scent of dark cherries rises, deep and with a clear acidity within.
The jar glows ruby red against the light; in the spoon, the spread appears almost black. Only fruit that has been harvested at peak ripeness and briefly heated becomes this dark.
On bread, the tartness leads, followed by the mild sweetness of the agave syrup, and both together feel more enlivening than a purely sugar-based jam. The fruit pulp is finely distributed, soft and creamy, with a color that borders on black.
Anyone who knows sour cherries from the garden will recognize this aroma, only spreadable and ready to hand all year round. After the first spoonful, the fruit acidity lingers on the tongue for a moment before the sweetness catches up.
The Morello, a cherry for preserving
In South Tyrol and Austria, the sour cherry is called the "Weichsel," and it is a distinct species from the sweet cherry.
Its flesh is more tender, its juice darker, and its acidity significantly higher, which is why it rarely impresses raw but excels when cooked. This is exactly why it has been in jam jars in Central Europe for centuries, while the sweet cherry is eaten fresh from the tree and quickly becomes bland in a jar.
When cooked by Alpe Pragas, this acidity is preserved, and the fruit is only rounded out by the sweetness. For a spread, this is an advantage, as the tartness prevents it from being merely sweet.
From breakfast toast to dark sauce
In the morning, the sour cherry sits beside quark and plain yogurt; in the evening, it sits beside the duck.
