Autolyse – a matured Blanc de Blanc Champagne from Le Brun de Neuville

The Champagne Autolyse from Champagne Le Brun de Neuville is a matured Blanc de Blanc Champagne, meaning a sparkling wine made from 100% Chardonnay grapes. Most of the base wine is aged in stainless steel tanks, but 5% ferments in oak barrels. To make the Champagne more complex, 10% of this cuvée comes from reserve wines of older vintages. A special technique that has a significant tradition in Champagne. Part of the cuvée has undergone malolactic fermentation, which provides a special mouthfeel and further complexity. Naturally, this high-quality Champagne undergoes the second fermentation in traditional bottle fermentation: using the Méthode champenoise. The Champagne Autolyse matures in the bottle for a full 11 years before being disgorged by hand.

Thanks to the high-quality base wines from 2008 and 2009 and the long bottle aging on the lees, this creamy Champagne seduces with a chalky minerality and a particularly fine, subtle perlage. It tastes soft and elegant yet full-bodied, like apple tart with caramelized almonds, plus raspberries with pistachios and white pepper, with a subtle herbal note. A grand, matured Champagne that serves wonderfully as a food companion.

Autolysis in Champagne – when the yeast decomposes

When the yeast gradually dies in the bottle at the end of fermentation and during aging on the lees, the phenomenon of autolysis occurs. This is the realization of a microorganism that interacts with the wine and provides strength and complexity. Autolysis thus refers to the decomposition of the yeast in the bottle after the second fermentation. This creates aromas reminiscent of floral, yeasty, and toasted notes. With longer storage, notes reminiscent of leather, tobacco, coffee, mocha, or candied fruits develop.

Autolyse is a matured Champagne from selected parcels, aged for ten years on the lees in the cellar, celebrating time and its imprint on the wine. All of this produces a special Champagne that shows identity and uniqueness. Only about 8,000 bottles of Autolyse Blanc de Blanc are produced by the Champagne house Le Brun de Neuville.
