Questions about Arrabbiata Sauce?

We are happy to help you with Don Antonio Sugo.

Don Antonio's Sugo all'Arrabbiata with Chili and Garlic

Don Antonio's Sugo all'Arrabbiata is a fiery tomato sauce from Roccascalegna, where 2 percent chili provides plenty of temperament. The label lists only 8 ingredients: tomato purée, olive oil, chili, garlic, parsley, sea salt, pepper, and citric acid. "Arrabbiata" means "angry" in English, and the Casina Rossa producer takes that quite literally.

Sugo all'Arrabbiata is the spicy tomato sauce from Don Antonio in Roccascalegna, Abruzzo, and it bears its name with good reason, as “arrabbiata” translates to “angry.” Tomato purée meets chili, accompanied by plenty of garlic and fresh parsley. With 8 items, it has the shortest ingredient list among the spicy varieties.

Fiery, garlicky, with a slow-building heat

The aroma from the jar is of sautéed garlic and fresh parsley; the chili heat only reveals itself while eating and then builds up slowly.

Fiery and spicy, the sauce coats the pasta without losing the fruitiness of the tomato – chili and garlic provide power, while parsley provides balance. Unlike milder Roman versions, this recipe relies on the hearty hallmark of the Abruzzo region, where spiciness has always been considered less of a gimmick and more of a staple seasoning.

Celery and carrots are omitted here so that nothing buffers the heat; the tomato purée carries the jar almost entirely on its own. The heat lingers for a long time without numbing the mouth, allowing the fruitiness to shine through every now and then.

For penne, on pizza, or in soup

The heat is best showcased with short tube pasta, as a pizza topping, or as a base for a spicy tomato soup.

Paired with Linguine Peperoncino by Pasta Morelli, the chili in the dish is effectively doubled. If you prefer it milder, stir in a spoonful of cream or grated Parmesan – both take the edge off the heat without overpowering the fruit, as fat binds the spicy compounds.

A cold beer pairs just as well with it as a bold red wine. Applied thinly on pizza, the sauce replaces any need for further seasoning, as the garlic and chili already bring everything required. Further varieties can be found in the Don Antonio collection, and more in the Pasta Sauces category.

8 ingredients, no soffritto, plenty of chili

In the gardens around Roccascalegna, chili often grows right next to the rows of tomatoes; it is harvested in August and processed on the very same day.

Unlike the milder varieties, this recipe manages without a soffritto. Celery, carrots, and onions are absent because their sweetness would buffer the heat. What remains is tomato purée, garlic, and chili – a sauce that draws its strength from omission rather than addition.

Instead, the garlic is sweated in olive oil before the tomato is added, and the parsley is folded in at the end so it retains its freshness. The dosage is everything: enough for real heat, but never so much that the flavor of the tomatoes is lost.

Of the 6 varieties on our shelf, the Arrabbiata is the one that lingers longest – in both the mouth and the memory. Once you've noticed how long the warmth remains, you'll reach for this label again next time. After all, spicy isn't the same thing as loud.
