Céline Citron are gluten-free lemon cookies from Generous, baked using a blend of buckwheat, potato starch, and tapioca. The crumbly butter dough contains 6.8% lemon juice and 0.2% natural lemon flavoring, topped with a delicate sugar glaze. The result is a cookie that tastes fresh and finely tart, completely wheat-free.

Fresh lemon, fine sugar glaze

Céline smells of freshly grated lemon zest, followed by the delicate acidity of lemon juice and finally the sweetness of the glaze. Just the scent from the opened box brings a touch of the Mediterranean to your table.

The sugar glaze lays a light veil over the cookie, softening the acidity. The cookie crumbles delicately as you eat it; the lemon remains zesty, and the aftertaste stays light. From a gluten-free bakery in Belgium

Christophe Harou founded Generous in 2013 after discovering his gluten intolerance and wanting to continue enjoying fine baked goods.

The cookies are handcrafted in the bakery in Tubize using organic ingredients and Belgian patience. Together with his wife Théodora and Brussels bakers Jean-Benoît and Aurélie Ghenne, Christophe built the company. As Christophe sees it, good taste does not require wheat. Every variety has its own name and character, and Céline is the fresh, sunny one among them, providing a bright note against the Speculoos and chocolates in the range. What began in 2013 is now an entire family of gluten-free cookies, each with its own personality.

For tea time and lemon sorbet

The box contains 120g, enough for the coffee table or afternoon tea. These lemon cookies are particularly lovely with green tea, a glass of Prosecco, or as a light summer treat. Especially when chocolate feels too heavy, Céline is the airy alternative. Stored in a cool, dry place, they remain crumbly for a long time and keep their fresh scent.
