Gluten-free Speculoos is the classic Speculoos from Generous in a traditional Saint Nicholas shape, baked using buckwheat instead of wheat. It is the same spiced dough as the round Sylvain Speculoos, but here it is a figure with a beard and coat, a must-have on every plate during the Advent season. A winter greeting from Belgium, completely wheat-free.

Cinnamon, nutmeg, and a crispy crunch

The dough tastes just like the round Sylvain, which people in the Benelux countries love with their coffee all year round: cinnamon, nutmeg, and the caramel sweetness of cane sugar and butter. Only here, the eyes get to feast on something a bit more festive.

The buckwheat gives the biscuit a fine and slightly nutty quality, without you missing the wheat. Spiced, crispy, and caramelly all at once – that’s how gluten-free speculoos should taste. Only the shape is different: instead of a round disc, you get Saint Nicholas, embossed into the biscuit just like in grandmother's day. Adults will feel nostalgic, and children will reach for them first anyway.

A winter biscuit with a long tradition

In Belgium and the Netherlands, shaped Speculoos has always been as much a part of Saint Nicholas Day as the boot left by the door. During the Advent season, it is placed on children's windowsills and guests' coffee plates.

The embossed motifs—Saint Nicholas, stars, and windmills—come from an old baking tradition that is otherwise inextricably linked with wheat flour. Generous brings them to the gluten-free shelf so that no one has to go without on December 6th. During the winter, you can find our gluten-free speculoos, while for the rest of the year, the round Sylvain takes its place with its 5g bite-sized biscuits. Belgian baking art without wheat

Christophe Harou founded Generous in 2013 after discovering his gluten intolerance and refusing to give up good biscuits.

In the workshop in Tubize, the dough is created from buckwheat flour, potato starch, cane sugar, butter, and egg, seasoned according to the old speculoos tradition, hand-shaped, and embossed into the Saint Nicholas mold. Good taste does not need wheat, as far as Christophe is concerned. Each figure gets its pattern from the mold, just like the wheat-based original. What began as a small venture in 2013 is today a whole family of gluten-free varieties with their own names and shapes.

On the Advent plate next to tangerines

During the Advent season, for Saint Nicholas Day, or as a wintry gift, these figures look especially nice. There are 140g in the box, enough for the whole family, while the round version is available all year round in its 100g tin. Stored in a cool and dry place, the biscuits stay crispy for a long time, and they look particularly festive on an Advent plate next to tangerines and nuts.

With coffee, tea, or a mug of cocoa in the afternoon, the speculoos is always ready. Children are welcome to nibble on their Saint Nicholas's beard first. If you like it chocolaty, the same Saint Nicholas figures are also available as Chocolate Speculoos with a coating of dark chocolate.
